Bocuse d’Or UK 2025 with Chef Russell Bateman
“Shannon with two n’s” a tall chef asked me this morning after Ashley introduced me to him. That chef was none other than Chef Russell Bateman, and in that moment I immediately felt at ease. It was the start of one of the most inspiring experiences of my career so far.
I had the honour of being his commis chef at the Bocuse d’Or UK National Competition. The next 4 hours 30 minutes were intense yet unforgettable.
Working with Chef Russell did not feel like a competition. It felt like a one to one masterclass. He even came prepared with his recipe booklet to guide me, which showed his generosity as both a chef and a mentor. His patience, leadership and teaching gave me confidence, and I learned so much simply by watching how he cooks, organises and leads under pressure.
When he was announced as runner up, I could not have been prouder. To me, he will always be number one.
There were many highlights that day. Meeting Chef Clare Smyth, a three Michelin starred chef I deeply admire, felt surreal. Watching Chef Oliver shine and Chef Rory perform so well reminded me how much talent is in the UK culinary world.
Behind the scenes, teamwork was everything. To my peers Jack, Mustafa and Zain, you were incredible teammates. Jack especially for running tirelessly to keep the kitchen flowing. And to our kitchen assistants Caroline, Nisha and Mark, your support was invaluable. Teamwork truly makes the dream work.
It was also wonderful meeting so many talented chefs, including Ian, Harry, Adam, Denise and the other top chefs of Bocuse d’Or Team UK. These connections and moments are things I will treasure.
Finally, thank you to Ashley, Michael and the University of West London for giving me this opportunity. It was more than just a competition, it was the start of something bigger.
